I love making these oatmeal cookies for breakfast when I want a fast and healthy snack, I prefer it to a breakfast bar any day. My toddler also loves it, and I feel good about it because it’s healthy and doesn’t have sugar. It is an excellent dessert or snack option for kids who can tolerate oatmeal. Occasionally I like to add chocolate chips in them. The coolest part is that anyone can make this, if you know how to use an oven, you can make this.
If you don’t have much time or patience for baking, or are a beginner baker, or just want something simple and healthy, you can STILL bake this! This recipe is a great beginner recipe with very few ingredients.
One thing to remember is that all ovens have a personality of their own. Some bake in less time, others take a few minutes longer. What you want to look for with these oatmeal cookies is that edges turning slightly golden brown. Also, let the cookies cool before transferring them to another container, that way they will be sturdier and not crumble apart as easily.
Other filling options you can use in these oatmeal cookies are raisins, dries cranberries or dried cherries, or coconut flakes. If you want to make them super healthy, you can add pumpkin seeds, chia seeds, flax seed, or hemp seed.
