5 minute Healthy and Simple Arugula Salad Recipe

Sometimes we get so caught up in making the main dish for dinner that we forget about those simple, yet delicious leafy green side dishes like this simple arugula salad recipe.
Whenever I remember, I like to start my meals by eating the leafy green vegetables first, then move on to the protein and/or carbs. This salad is so easy and simple to make, it comes together in 5 minutes and is great for days you want to add more fiber to your diet in a short amount of time.
What really stands out in this simple arugula recipe is the pine nuts. Pine nuts are packed with high in antioxidants, contain magnesium, are rich in healthy fats, protein, iron, and help with appetite control.
When I make this salad, I love toasting the raw pine nuts until they turn golden brown. I prefer the rich flavor that it develops from toasting it.
Should you wash pre-washed leafy greens?
Although many leafy green vegetables from the grocery store already claim they are “washed” or “triple washed,” I still wash my leafy greens. When large companies wash fruits and vegetables, often times it is being washed with chemicals such as bleach. It doesn’t matter if it is organic or not, I still wash all fruits and vegetables before consumption.
When I wash these “triple washed” leafy greens, I see cloudy or dirt residue so if you ask me, I recommend washing all fruits and vegetables, and if it’s leafy greens, I dry them with a paper towel or a clean, lint-free kitchen towel.

Simple Arugula Salad Recipe
Ingredients
Method
- In a medium skillet, toast pine nuts, stirring often, until they turn golden brown. Set aside.
- Rinse and thoroughly dry arugula with a clean. lint-free dish towel and place into a large bowl. Set aside.
- Add diced avocados and toasted pine nuts to the arugula.
- Now add all the ingredients for the dressing (extra virgin olive oil, Dijon mustard, lemon juice, salt, pepper), and whisk until well combined.
- Add dressing to arugula mixture and serve immediately. Enjoy!
