Ingredients
  

  • 4 cups Arugula or baby arugula rinsed and dried
  • ½ cup Pine nuts dry toasted
  • 1 Avocado medium size
Dressing
  • ¼ cup Extra virgin olive oil
  • 1 tsp Dijon mustard
  • 2 tbsp Freshly squeezed lemon juice
  • Pinch of salt and pepper To taste

Method
 

  1. In a medium skillet, toast pine nuts, stirring often, until they turn golden brown. Set aside.
  2. Rinse and thoroughly dry arugula with a clean. lint-free dish towel and place into a large bowl. Set aside.
  3. Add diced avocados and toasted pine nuts to the arugula.
  4. Now add all the ingredients for the dressing (extra virgin olive oil, Dijon mustard, lemon juice, salt, pepper), and whisk until well combined.
  5. Add dressing to arugula mixture and serve immediately. Enjoy!
