One of my favorite things about this cabbage salad is its simplicity. The salad itself is made with just four simple ingredients, plus an easy homemade dressing.
You can still make the salad without a mandolin slicer by just slicing it as thin as possible, it will just have a slightly thicker texture.
Usually when I use corn in salads, I like using frozen corn and thawing it by submerging it in boiling water for 5 minutes.

Easy Cabbage Salad with Homemade Dressing

- Slice washed cabbage and set aside.
- If using frozen corn, add the corn in a heat-friendly container and submerge it in boiled water for about 5 minutes to thaw.
- Add the minced garlic, and cilantro to the cabbage.
- Next, strain the corn, and add the strained and thawed corn to the cabbage mix. Set aside.
- Make the dressing by adding the extra virgin olive oil, lemon juice, salt, pepper, and paprika. Stir well and add to the cabbage salad.
- Toss until well incorporated and serve immediately.
