This Chinese Chicken Salad is one you can not miss out on! It is naturally gluten free. It is made with iceberg lettuce and chicken breast, and has a combination of flavors that will have you coming back for seconds, and thirds!

I was inspired by Chi Dynasty’s famous Chinese Chicken Salad. If you’ve tried their salad before you KNOW how delicious it tastes. If you have not, you will soon get a taste of this incredible salad when you make it. It will certainly become a staple dish in your house, and trust me when I say, once you make it, you will be craving it all the time!

You can even make this salad as a main dish instead of a side. It is guaranteed to satisfy your salad cravings.

How to Marinate Chicken

Marinating chicken doesn’t always have to be complicated. If you have good quality chicken, a few simple ingredients will make your chicken taste delicious. For this recipe, I marinate the chicken in fresh squeezed lemon juice, salt, pepper, and paprika. I then place it in the fridge for about 30 minutes to let the flavors infuse the chicken.

How to Make a Juicy Chicken

I like to do something specific when cooking chicken breast. I place it in a ziplog bag and pound the thickest part of the chicken with a meat tenderizer. This ensures my chicken will cook evenly, and it really does make a difference. I believe it is worth the extra step. I do this step after it has marinated for at least 30 minutes. I leave it in the ziplog bag and pound it this way. Then I pan sear for about 5-7 minutes on each side. Chicken is fully cooked when the internal temperature of the chicken is 165F (74C). If you cook a lot of meat, investing in a meat thermometer is also an option.

Tips and Tricks with Chinese Chicken Salad

This salad tastes best when the iceberg lettuce and chicken are finely sliced. Here is a nice shortcut of lists to remember:

  • Wait until chicken cools down before slicing it
  • Slice the chicken against the grain
  • Marinate chicken in the refrigerator for at least 30 minutes
  • Slice the chicken to about half inch thinness and 2 inches in length
  • Add dressing just before serving to avoid lettuce getting soggy

Ingredients

1 lb organic or pasture-raised chicken breast
1 tbsp lemon juice (freshly squeezed)
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 head of medium-sized iceberg lettuce
4 green onions
3 tbsp finely chopped cilantro

Dressing
1 tbsp extra virgin olive oil
1 tbsp sesame oil
2 tbsp of tamari (this is the Gluten Free version of soy sauce)
3 1/2 tbsp rice vinegar
2 tsp honey
1 tbsp toasted sesame seeds (plus more for garnish)
2 cloves garlic (minced)
1/2 tbsp grated ginger
pinch of salt and pepper
