Easy Cabbage Salad with Homemade Dressing

Ingredients
  

  • 4 cups Thinly sliced cabbage (If using a mandolin slicer, put on #1 setting)
  • 3 Cloves of garlic
  • 1 cup Corn (frozen or canned loose corn)
  • cup Chopped cilantro (About half a bunch)
Dressing
  • tbsp Extra virgin olive oil
  • 1 tbsp Lemon juice Freshly Squeezed
  • ½ tsp Paprika
  • ½ tsp Salt (Or to taste)
  • ½ tsp Black pepper

Equipment

  • 1 Mandolin slicer On #1 Setting

Method
 

  1. Slice washed cabbage and set aside.
  2. If using frozen corn, add the corn in a heat-friendly container and submerge it in boiled water for about 5 minutes to thaw.
  3. Add the minced garlic, and cilantro to the cabbage.
  4. Next, strain the corn, and add the strained and thawed corn to the cabbage mix. Set aside.
  5. Make the dressing by adding the extra virgin olive oil, lemon juice, salt, pepper, and paprika. Stir well and add to the cabbage salad.
  6. Toss until well incorporated and serve immediately.

Notes

To Store: Place leftovers into an airtight container in the refrigerator for up to 3 days.
