Easy No Bake 15 Minute Dessert

Get ready to have a pineapple walnut salad so good, you will be repeatedly dreaming about it. I bet you have seen and tried plenty of pineapple salads.

When I found myself craving a pineapple salad, all I could find were recipes with cool whip. If cool whip is your cup of tea, you may want to skip this recipe.

When I looked at the ingredients in cool whip, I was genuinely flabbergasted! I knew I just could not bring myself to purchase, or make anything with cool whip. I was determined to create the best pineapple walnut salad WITHOUT cool whip.

What I discovered was how incredibly fresh and delicious pineapple walnut salad was when made with heavy whipping cream.

If you’ve never whipped heavy cream before, you are going to find out that it is way easier than you’ve imagined. What’s even better is when you add a bit of sweetener to heavy cream and whip it, you get the tastiest and healthier version of “cool whip” imaginable!

This no bake dessert recipe is so easy to make, and is guaranteed to be a crowd pleaser at any gathering! Anytime I make this salad, I get asked for the recipe almost immediately. That’s why I decided to post it here because it is so good I wanted it share it with all of you.

You can make this recipe using either a hand mixer or a stand mixer. I use a hand mixer and it only takes me about 5-6 minutes to whip the heavy cream.

Pineapple Walnut Salad

A refreshing, delightful no bake dessert filled with tropical flavors you will devour.
Prep Time 15 minutes
Chill Time 1 hour
Servings: 15 people

Ingredients
  

  • 1 pint Organic Heavy Cream About 2 ⅓ cups
  • tsp Vanilla Bean Paste
  • 20 oz Canned Sliced Pineapples in Pineapple Juice (reserve 1 tbsp of the juice) I prefer the sliced ones and chop it myself
  • cups Chopped Walnuts
  • ¾ cup Organic Sweetened Condensed Milk 7 oz
  • ¾ cup Shredded coconut Unsweetened
  • 1 tbsp pineapple juice from canned pineapples

Equipment

  • 1 Hand mixer or stand mixer

Method
 

  1. Whip heavy cream with a mixer until stiff peaks form. About 5 minutes on high. (Texture should resemble whipped cream)
  2. Add the condensed milk and vanilla bean paste and mix for another minute.
  3. Next add shredded coconut, pineapple juice, chopped walnuts and pineapples
    Stir until well combined.
  4. Place it in a large container or individual serving cups. *Optional- Garnish with additional walnuts and pineapples.
  5. Chill in the refrigerator for 1 hour or longer. Best served cold. Enjoy!
