A note about oats
Since this recipe does call for rolled oats, I want to share something very important with you. The quality of your oats matter. What do I mean when I say that? It is important that the oats you buy say GF on it. Even if you consume gluten (which I do), I won’t buy oatmeal unless it says GF on it.
Why GF Oatmeal?
Oats are one of those ingredients that are highly sprayed toxic pesticides currently known as glyphosate. Glyphosate is a carcinogen and high doses result in numerous health and gut issues and intolerance. So, the best kind of oatmeal to consume isn’t that it be organic BUT Gluten Free AND Organic. This combination will give you some peace of mind and lower the consumption of toxic chemicals in your food.

Yes you can! This apple cinnamon muffins recipe is very forgiving. You can use either quick cooking oats instead of old fashioned rolled oats for this muffin recipe.
Now you just need a few simple ingredients and some good music.

| Ingredients 1 egg 1/2 cup milk 1 tsp baking soda 1 tsp vanilla extract 1/3 cup maple syrup 1 cup grated apple (about 1 large apple) 1 heaping cup old fashioned rolled oats 1 tbsp cinnamon (ground) 1 cup whole wheat flour 3/4 tsp salt 4 tbsp melted butter 1/2 cup raisins (use your favorite kind) |

| Instructions 1.Preheat oven to 350F. Line a cupcake pan with unbleached muffin liners and set aside. 2.Whisk 1 egg in a large mixing bowl then add maple syrup, and vanilla extract and whisk until well combined. 3. Mix 1 tsp of baking soda to your milk and add that to your bowl as well. Stir until well combined. (see video) 4. Next add grated apples, cinnamon, old fashioned oats, whole wheat flour, salt, and melted butter and stir until well combined. 5. Finally add raisins and stir then full each muffin liner 3/4 of the way. 6. Bake for 18-20 minutes or until a toothpick inserted at the center of the muffin comes out clean. 7. Let it cool for 10 minutes and enjoy for breakfast or dessert! *Optional toppings Chocolate chips Walnuts Pecans Coconut flakes dried cranberries |
