Nutrient Dense Spelt Muffins
If you’ve never had spelt muffins, you’re in for a real treat! Aside from it being genuinely delicious, spelt flour has so many health benefits! Spelt flour is easier to digest the regular flour, and it has magnesium, manganese, fiber, copper, iron, zinc, folate, calcium, potassium and phosphorus. The nutritional benefits of spelt allow for your body to aid circulation in the blood, build strong bones, boost immunity, aids digestion, and reduces high blood pressure. (Source Dr. Axe)
Additionally, spelt is also higher in fiber than most modern wheat and it’s gluten structure is weaker so it doesn’t rise the same way wheat does.
With that said, I am amazed at how little recipes exist out there using spelt flour! In case you weren’t aware, I’m slightly obsessed with blueberry muffins of all sorts, and I’ve made more types than I can count. Let me just tell you that you must try it yourself if you want to become a believer!
Spelt muffins remind me so much of a quaint bed and breakfast morning. Bed and Breakfasts usually have the most unique, cozy and delicious breakfast options. The kind you reminisce about with sweet longing.

| Serves: 12 regular size muffins | Total Time: 30 minutes |

| Ingredients 1 1/2 cup spelt flour (*I used this one) 1/2 tsp salt 1 tsp baking soda 1 tsp baking powder 1/2 tsp cinnamon 1 egg (room temperature) 3/4 cup sugar 1 tbsp molasses 1/2 cup yogurt 1/4 cup avocado oil 1 tsp zest of lemon (approximately 1 lemon) 1/2 cup frozen wild blueberries |


Instructions
3. In a medium bowl, add spelt flour, salt, baking powder, baking soda, and cinnamon and stir until well combined.
