Incredible Kale Salad
I truly love kale and its versatility! You can make smoothies with it, kale chips (see my recipe here), and so many different kinds of salads!
The kale salad from Gelsons was the first time I tried kale. This was way back when no one had even heard of kale. After trying it one time, I just simply couldn’t get enough! The freshness, earthy, and floral notes of kale with the combination of a ginger dressing blew my taste buds away.
Getting my kale salad fix became a treat I would get myself once a week. Many years later I couldn’t stop thinking about it, so I kept trying to recreate it. At first, it was good, but still nothing like the one I would get. For a long time, I gave up. Then I started working on it again, because I just simply couldn’t stop craving that kale salad.
After a ton of tweaks and trials and error, I can now confidently say that I finally created the perfect Gelsons kale salad recipe and it tastes just like the one I used to purchase! What I love most about this salad is that it is very simple to make.It is important to note that used high quality ingredients for the dressing are important and really take your salad to another level.
You can serve this salad with Chicken, tofu, salmon, grilled white fish, or use your favorite protein. It is a versatile kale salad and goes well with almost anything, or you can enjoy on its own. When I make this salad, I like to eat a giant bowl of it without protein.

Ingredients Dressing |
| Instructions 1. Take the stems out of the kale using your hands or a knife and finely chop your kale. Place into a large mixing bowl. 2. Add the olive oil to the chopped kale and vigorously massage with your hands for about 3 minutes. set aside. 3. Grate your carrots using the smaller shredding holes (*see video) Add grated carrots to the kale bowl. 4. Squeeze lemon juice into a small bowl. 5. Peel and grate your ginger. (I really like this grater, but you can use any fine grater you desire) 6. Add grated ginger to lemon juice and mix well. 7. Add the sunflower seeds, lemon juice and ginger mixture to the kale and mix well. Enjoy! *It even tastes good the next day if you have leftovers. |
