A Quick and Easy, Gluten-Free Low-Carb Zucchini Wrap Recipe
This 2 ingredient gluten alternative zucchini wrap recipe is delicious and can be used with a variety of different toppings.
You can either enjoy it as is, or load it up like a sandwich with your favorite ingredients for breakfast, lunch, or dinner!
This easy recipe is ready in under 30 minutes. All you need is a large baking sheet and a vegetable peeler.
How to make zucchini crispy
There are a few tricks to making the zucchini wrap nice and crispy.
First, you want to make sure the zucchini is sliced thin. The thinner they are sliced, the crispier they will be.
Second, you want to make sure your oven is preheated to 400F. Having a hot oven will also support a crispy, zucchini wrap crust.

- Preheat oven to 400 ℉. Slice the zucchinis lengthwise using a vegetable peeler, and pat dry with a paper towel.
- Align them next to each other to make 3 wraps approximately 8 x 6 inches.
- Next, drizzle olive oil, salt and pepper and gently spread it evenly on the zucchini.
- Sprinkle the shredded Parmesan evenly onto all 3 wraps.
- Bake at 400℉ for 15-20 minutes, or until the edges of the wrap are golden brown.
- Allow it to cool for 5 minutes, and either add your favorite fillings, or enjoy as is!
