Zucchini Wrap

Ingredients
  

  • 2 Medium-sized zucchini Sliced thin lengthwise
  • 1 cup Shredded Parmesan cheese
  • 1 tbsp Extra virgin olive oil
  • Pinch of salt and pepper to taste

Equipment

  • 1 Vegetable Peeler

Method
 

  1. Preheat oven to 400 ℉. Slice the zucchinis lengthwise using a vegetable peeler, and pat dry with a paper towel.
  2. Align them next to each other to make 3 wraps approximately 8 x 6 inches.
  3. Next, drizzle olive oil, salt and pepper and gently spread it evenly on the zucchini.
  4. Sprinkle the shredded Parmesan evenly onto all 3 wraps.
  5. Bake at 400℉ for 15-20 minutes, or until the edges of the wrap are golden brown.
  6. Allow it to cool for 5 minutes, and either add your favorite fillings, or enjoy as is!
