- Preheat oven to 400 ℉. Slice the zucchinis lengthwise using a vegetable peeler, and pat dry with a paper towel.
- Align them next to each other to make 3 wraps approximately 8 x 6 inches.
- Next, drizzle olive oil, salt and pepper and gently spread it evenly on the zucchini.
- Sprinkle the shredded Parmesan evenly onto all 3 wraps.
- Bake at 400℉ for 15-20 minutes, or until the edges of the wrap are golden brown.
- Allow it to cool for 5 minutes, and either add your favorite fillings, or enjoy as is!
