The Only Banana Bread Recipe You Will Need

For me, banana bread has always been one of those things I make when I have too many bananas at home and they are about to get very ripe. Once in blue moon I would crave it, but if I am being honest, it’s never been that exciting for me to make.

I have tried and tested this recipe so many times because I was determined to convince my family to like banana bread. I can now say I have succeeded only with this banana bread recipe. I have tried many different versions and would always end up throwing away leftovers because no one wanted to eat it.

There is one ingredient that takes this recipe to a new level and that is espresso powder. However, you can omit that if you do not want the caffeine and it is still going to taste ridiculously good. I make it both ways. Without the espresso powder for my kids, and with the espresso powder for adults. It is fantastic either way.

Serves: About 4-6Total Time: 70 minutes
Banana Bread Recipe

Ingredients
5 tbsp unsalted butter (melted and slightly cooled)
2 bananas
1 egg
2 tbsp grape or mulberry molasses (this is my favorite)
1 tsp vanilla bean paste or vanilla extract
1/2 cup sugar
1/2 tbsp espresso powder
2 tsp cinnamon (this is a good one)
1 1/2 cups All Purpose flour
1 tsp baking soda
1/2 tsp salt (omit if butter is salted)
1/2 cup chopped pecans (or walnuts)
Instructions
1. Preheat oven to 350F. Grease a 9X3 inch loaf pant with butter or avocado oil.
2. Melt the butter in a small pan and set aside to cool.
3. In a medium bowl, mash the two bananas.
4. To the mashed bananas, add egg, molasses, sugar, vanilla bean paste, and stir until well combined.
5. Add espresso powder (if using), cinnamon, flour, baking soda, and salt. Stir until well combined.
6. Lastly, fold the melted and cooled butter until well combined and lastly, fold in the chopped pecans
8. Bake for about 50-60 minutes or until a toothpick entered into the center of the banana bread comes out clean. Enjoy!
