Best Banana Cake with Simple Ingredients

If you are looking for a new way to make a banana recipe, this banana cake will be your new favorite recipe!

Don’t get me wrong, banana bread is delicious, but sometimes I need a different texture and prefer a shorter baking time.

This banana cake recipe is quick and easy to make, and guaranteed to be a crowd-pleaser! No mixer, no fuss, and ready in 20-25 minutes.

My family now prefers this banana cake recipe over any other banana desserts I make.

An Insider’s Baking Tip

This one profound baking tip is what takes this banana cake recipe and makes it taste like candy cake!

I use 1/2 cup of sugar for this recipe and 2 overripe bananas. If you use organic sugar in your baking like I do, you know the texture of organic sugar is a bit more course than regular white sugar. With that said, I like taking organic sugar, and blending it in a small blender to a powdery finish. This creates an almost powdered sugar texture, just slightly less fine. If you want to skip this step, you may substitute with powdered sugar on a 1:1 ratio.

Best Type of Bananas for Banana Cake?

Here is where some people may have very opinions when it comes to baking with bananas. Personally, I do not usually measure mashed bananas. I know they all come in different sizes and it can vary, but baking with bananas has never varied for me enough for me to want to measure them. It has always turned out just fine one way or another.

One thing I did learn when it comes to baking with mashed bananas is that everyone’s definition of “overripe bananas” varies. Some people say “overripe” bananas to bananas that are super dark brown, while others say it’s overripe when the banana has 1 dark spot on it.

The best advice I can give you on this is the following:

Bake with overripe bananas that you would STILL enjoy the taste of! Think about it, if you were eating the banana on its own and the thought of eating those overripe bananas on your counter taste gross to you, DON’T use it in your baking. Chances are you will not like the taste of it in a banana pastry. Therefore, bake with bananas that are perfectly overripe for your taste. Realizing this was a game-changer with my very own baking.

Baking Time

Depending on the size and material of your pan, and even your specific oven, baking time will vary. So I recommend keeping a watchful eye on baking around the 15-20 minute mark.

Quick and Easy Delicious Banana Cake Recipe
Prep Time 5 minutes

Ingredients
  

  • 1 ⅓ cup All purpose flour (I use unbleached organic flour)
  • tsp Baking Powder
  • ½ tsp Salt
  • 2 Bananas (Mashed) overripe to your liking
  • 1 tsp Vanilla Bean Paste
  • 2 eggs room temperature
  • ½ cup organic sugar (blended to a fine powder) or powdered sugar
  • 6 tbsp Melted and Cooled Butter

Method
 

  1. Preheat oven to 350 °F. Line a 8 or 9 inch round or square baking pan with parchment paper and brush melted butter all over, and set aside.
  2. In a large mixing bowl, add flour, baking powder, and salt and whisk until well combined. Set aside.
  3. In another mixing bowl, mash bananas and add vanilla bean extract, sugar, and eggs. Whisk until well incorporated.
  4. Add the banana mixture to the flour mixture, and whisk until well combined.
  5. Lastly, add the melted and cooled butter and whisk until well incorporated.
  6. Pour the batter to a lined baking pan and bake at 350 °F for 20-25 minutes or until a toothpick inserted at the center of the cake comes out clean.

Notes

*Baking time will vary based on the type and size of pan you use. Keep a watchful eye when the baking time hits close to 20 minutes.
