A Delicious Fresh Apple Cake Recipe
If you are looking for a simple, easy to put together cake you are going to love my homemade fresh apple cake recipe! It is low in sugar, crunchy on the outside and moist on the inside. It pairs so well with a delicious cup of freshly brewed tea or coffee. To truly grasp the essence of this delicious apple cake, you must bake it!
I used this angel food cake pan to make this apple cake. You can also use any round 9 or 10 inch inch cake pan. The time the cake takes to bake will vary depending on the material, color, and size of your pan, so keep a close eye on it after 30 minutes of baking to prevent an overly baked cake. My cake took about 42 minutes, and I used a 10 inch stainless steel pan.
I recommend slicing the apples first and adding the coconut sugar, cinnamon and lemon juice, and set aside for it to marinate as you prepare the cake batter. Use your favorite type of apples. I used honey crisp apples, they are slightly tang and slightly sweet. The vanilla extract in this recipe really bring the flavors together beautifully.
I used a hand mixer to beat the wet ingredients then used a spatula to stir the dry ingredients into the wet ingredients. Flour doesn’t like to be mixed too much so you want to always be mindful to not overdo it whenever using a mixer with cake batter.
Lastly, your cake batter will look thicker than a typical cake batter, and that’s okay! It is supposed to look thick for this cake. The texture and style of this cake is on the dry side.

| Ingredients 2 cups thinly sliced and peeled apples 1 tsp ground cinnamon 2 1/2 tbsp coconut sugar 1 tbsp lemon juice (juice of approximately 1 lemon) 3 eggs 3/4 cup sugar 1 cup yogurt (I used full-fat) 1 cup avocado oil 2 cups flour 1 1/2 tsp baking soda 1/2 tsp baking powder 1 tsp salt 1 tsp vanilla extract 1 tbsp avocado oil (for greasing pan) |



| Instructions 1. First peel and thinly slice 2 cups of apples. (Approximately 2 large apples) 2. Preheat oven to 350F 3. Add coconut sugar, cinnamon, and lemon juice, stir and set aside. 4, In a large mixing bowl, beat the eggs adding them one at a time. 5. Add sugar and beat for about a minute. 6. Add yogurt and oil and beat again for about a minute. 7. Add flour, baking soda, baking powder, and salt and stir with a silicone spatula until well combined and flour is not visible. 8. Generously grease your 9 or 10 inch cake pan with avocado oil. 9. Lay out the apples as flat as possible into one layer inside the greased cake pan. 10. Spread the cake batter evenly on top of the apples. 11. Bake for 40-45 or until a toothpick inserted into the cake comes out clean, 12. Gently scrape the sides of the cake with a butter knife then flip over while hot (use kitchen mittens). Let it cool for about 10 minutes and enjoy! |
