- In a medium bowl, add ground beef, grated onion, tomato paste,yogurt, minced garlic, oregano, paprika, cumin, salt, pepper, and olive oil.
- Next, mix everything with your hands until well combined. Cover and refrigerate for 20-30 minutes to let the flavors marinate.
- Remove the meat mixture and evenly divide it into 4 parts.
- Preheat oven to 400 °F
- Place one large piece of Parchment paper (about 16 inches long) and add ¼ of the meat mixture. Place another piece of parchment paper evenly on top and use a rolling pin to even out the meat.
- The meat should be very thin, about (¼ inches) thick and it should not seep out of the parchment paper.
- Next, from the short side of the parchment paper roll the 2 pieces of parchment paper with the meat in between to about 2 inches in width. Keep rolling and flattening with your hands until there is nothing left to roll. Flatten with your hands and place onto a flat baking sheet.
- Repeat step 7 with the remainder of the meat. Use ¼ of the meat mixture at a time.
- You should have 4 pieces of rolled beef mixture. Bake at 400 °F for 15-20 minutes. The meat should be a browned at the edges. Remove from paper and shred into big chunks. Serve warm on your favorite type of bread, vegetables, or a bowl of rice. Enjoy!
For the Tzatziki Sauce
- Add all your ingredients to a small bowl and stir. If you want a thicker sauce, use Greek yogurt. For a thinner sauce use European style yogurt.
