Blossom Cookies

Traditional Blossom Cookies that are made with peanut butter, low in sugar, and will have you coming back for more.

Ingredients
  

  • ¾ cup Brown Sugar
  • ½ cup Peanut Butter Creamy
  • ½ cup Unsalted Butter Softened
  • ½ tsp Salt
  • 1 Egg
  • ½ tsp Vanilla bean paste Or 1 tsp of vanilla extract
  • 1 tsp Baking Soda
  • 1 ¼ Cup All Purpose Flour
  • 30 pieces Hershey kisses chocolate

Equipment

  • 1 Baking Sheet
  • 1 Unbleached Parchment Paper
  • 1 Small Cookie Scoop

Method
 

  1. . Preheat oven to 350
  2. In a large bowl, beat the butter and brown sugar until it resembles a creamy texture. (About 2 minutes).
  3. Next add the egg, peanut butter, vanilla bean paste, salt, baking soda, and flour. Mix with an electric mixer until well incorporated.
  4. Add the flour (a few tablespoons at a time) and gently stir with a spatula, then mix with the mixer until no flour is visible. *Don't overmix
  5. Using a cookie scoop, shape the dough into about 2 inch balls.
  6. Place them on a baking sheet lined with parchment paper about 2 inches apart. Bake for 8-10 minutes or until the edges are light golden brown.
  7. Meanwhile, remove the wrappers of the hershey's kisses chocolate and set them aside. As soon as you remove the cookies from the oven, gently press 1 piece of chocolate on each cookie and allow it to cool for 5-10 minutes.

Notes

Once cookies are completely cooled, store them in an airtight container at room temperature for up to 5 days.
