Dinner Ideas with Chicken and Potatoes

Sometimes all you need is a simple and delicious chicken and potatoes that brings satiating comfort. The endless pondering of “what to make for dinner” seems to be a constant question circling around in all our minds at one point or another.

I try very hard to create dinners where it can last for two days, because who want to make dinner every, single, day? I quickly realized when I overthink dinner, it gets too overwhelming and a lot of times discouraging.

So today’s recipe is a result of me making the effort to not overthink anything and giving myself, and you some grace with simplicity. I made this recipe using a whole spatchcocked chicken. I didn’t spachcock it any special way, just a way that assisted in making the chicken flatter.

To Cook the Chicken

Some other ways you can cook your chicken in this chicken and potatoes recipe is using pre-cut chicken, chicken breast and/or thighs or wings. It does not need to be a whole chicken if you do not want it to be. If you use pre-cut chicken you can use anywhere from 2-3 lbs of whichever part of the chicken you like. I do recommend setting aside some time to make this since we will be baking the chicken for about an hour. If frozen, make sure your chicken is thawed and ready to be cooked.

To Cook the Potatoes

As far as potatoes, we will be baking the potatoes sliced in a “French Fry” style. The only difference between real french fries and my version of french fries is that I bake them instead of frying. Baking is a much healthier way to cook your food and these fries disappear so fast you will be wishing you made a double batch!

I also use a simple sauce I make with sour cream for this chicken and potatoes dinner. The sour cream gets spread liberally all over the chicken for a boost in flavor you will absolutely love! Prep Time: 15 minutesCook Time: 1 hour
Serves: 4-6Total Time: 1 hour and 15 minutes
Ingredients
1 medium sized whole chicken or (3 lbs of your favorite part of the chicken)
3 bay leaves
1 tsp black peppercorns
2 tsp salt

Chicken Marinade
1 cup sour cream
1 tsp garlic powder
1 tsp paprika
1/2 tsp black pepper
2 tsp salt

French Fry Style Potatoes
8 medium sized russet potatoes (roughly 4 cups chopped)
2 tsp salt (works best with this salt)
1/2 tsp paprika
1/4 cup olive 0il

Instructions
1. Preheat your oven to 370F.
2. First place your thawed chicken in a large bowl and fill it with water until all of the chicken is covered.
3. Next add bay leaves, peppercorn, and salt and let it sit for about 15-20 minutes.

4. Then prepare the chicken marinade by combining the sour cream, garlic powder, paprika, salt, and black pepper. Stir until well combined and set aside.

5. Peel and slice your potatoes into french fry shapes by slicing about 1/2 inch wide. (*see video)

6. Next add olive oil, paprika, and salt to the sliced potatoes and mix until all is well combined.
7. Afterwards, place the potatoes into a large baking sheet lined with parchment paper and spread the potatoes out as much as possible.

8. Take out the chicken and place that onto a separate baking sheet lined with parchment paper.

9. Now liberally spread the chicken marinade all over the chicken making sure to cover every part evenly.
10. After that, place the french fries on the top rack and the chicken in the middle rack.
11. Roast the potatoes for approximately 30 minutes or until the edges of the potatoes turn golden brown.
12. Bring the chicken to the top rack and cook the chicken for approximately an additional 30 minutes. *see notes below
13. Lastly, once the chicken has cooked through serve with the french fries and enjoy!

*Note
The time the chicken takes to cook will vary on many factors so it is important you check your chicken at the 30 minute mark.

If you are cooking a whole chicken, it may take longer depending on the size of the chicken
and your oven.

If you are cooking chicken pieces chopped up, it will be ready much sooner. I like checking for done-ness by slicing the chicken thighs and making sure there is no visible pink color.


If you have a meat thermometer you can also check the chicken that way.

The internal temperature of a chicken must be at least 165F. It should be inserted into the thickest part of the breast and the inner part of the thigh.
