A Delicious Raw Broccoli Salad Recipe
If you’re looking for a fun way to enjoy a salad, you will love this broccoli salad with mayo dressing. I still can’t decide whether I like eating broccoli raw or steamed. I think it’s might partially because I crave both depending on what I am feeling.
If you’ve ever been to soup plantation and have tried their broccoli salad, or the broccoli salad mix from Costco, my version is very similar. If you know my recipes, you know what I like making recipes as healthy as possible. Some appetizers, salads, and entree’s do call for sugar and when it comes to salads, less is more!
I don’t know about you, but I like my salads to NOT taste like dessert; because then I won’t crave dessert, and if you ask me, we must leave room for both! With that said, every single broccoli mayonnaise recipe I’ve seen was just way. too, sweet. So, I’ve created my version of the famous broccoli salad with mayo that I hope you will enjoy.
This broccoli salad recipe still has some sweetness too it; however, we will be using maple syrup as our alternative. Any brand of maple syrup will work! Just make sure it’s an original flavor and not any fruity ones for the purpose of this broccoli salad.
I also want to share a note about cooking bacon. The way I like to do cook bacon is to line a sheet pan with 2 parchment papers and place the bacon side by side without crowding it. If they overlap sometimes it cooks unevenly. You also should check on the bacon often for readiness. I have cooked bacon using 3 different ovens and the cooking time varied for all three!
This is my preferred way to cook bacon because I have noticed the smell of bacon doesn’t linger for as long if I cook it in the oven. Feel free to cook your bacon on the stove top if you prefer it that way. One last note I’d like to share is that I like to dab some of the excess oil for before consuming. It makes the bacon feel less heavy on the digestive system.
This broccoli salad also makes a great potluck salad for all to enjoy. It’s different enough that those who love salads will certainly be curious to try. | Serves: 5-6 | Total Time: 25 minutes |
| Ingredients 5 cups finely chopped broccoli (approximately 2-3 heads) 1 1/2 tbsp roasted sunflower seeds (I used salted) 1 1/2 tbsp raw pepitas (pumpkin seeds) 2 tbsp chopped red onions (shallots will also work) 1/4 cup raisins (or dried cherries * I used half of each) 4 pieces of crispy bacon (chopped) Dressing 1/2 cup mayonnaise 2 tbsp maple syrup 2 tbsp apple cider vinegar |
| Instructions 1. Place the bacon in a preheated oven at 375F and bake until crispy (approximately 10-15 minutes). 2. Finely chop rinsed broccoli, and red onions and add to a large bowl. 3. Add sunflower seeds and pepitas to that same bowl. 4. Once bacon is cooked and crispy, either chop or crumble them into small pieces and add to that same bowl. 5. Make the dressing by adding the mayonnaise, apple cider vinegar, and maple syrup and stir until well combined. 6. Add the dressing to the broccoli mixed just before serving, mix well and enjoy the best broccoli salad! |
