An Easy Burrata Salad with Arugula
I hadn’t been a fan of burrata salad until recently when I found out that not all burratas are created equal. The very first time I tried it, it tasted so flavorless and bland. I had purchased burrata from a local grocery store and didn’t think of making a salad, so I just tried it on its own.
Years later I decided to give it another try but this time I purchased burrata from the farmer’s market. I couldn’t believe the difference in flavor from when I last tasted burrata! It didn’t even taste like the same breed of cheese! Now I treat farmer’s market burrata as a delicacy where I like to treat myself once in a while.
I love eating good quality burrata cheese on its own, but I wanted to add some character to my burrata so I created this dressed up burrata salad with very few ingredients that is ready in under 5 minutes! It is guaranteed to spark interest in anyone who is a cheese lover.
I have spoken about the incredible nutritional benefits of arugula in my other arugula salad recipes so I’d definitely call it a superfood!
As far as preparing my ingredients, I like to rinse and dry my arugula even when the package says it is per-rinsed. As far as the burrata is concerned, I prefer mine from the farmer’s market, but if you do not have access to that and like the taste of grocery burrata, feel free to use that.
Quality Ingredients
Lastly, if you know me, you know I don’t like too many processed products, or pre-made dressings or glazes with gums or thickeners. That is why under my ingredients you should check out my recommendation for the best quality balsamic glaze.

| Ingredients 2 cups arugula (rinsed and dried) 1 ball of burrata cheese Juice of half a lemon 2 tsp of extra virgin olive oil drizzle of balsamic glaze Parmesan cheese, as much a desired (shaved) |


| Instructions 1. Rinse and dry the arugula with a paper towel and place in a single size serving bowl. 2. Add lemon juice, olive oil, salt and pepper and toss until evenly distributed. 3. Place the burrata into the center of the arugula. Slit the center in an X shape with scissors and gently open the center with a spoon or fork 4. Drizzle a small amount of balsamic glaze and shave a few pieces of Parmesan using a peeler and enjoy! |
