Hello dearest readers! I hope everyone is doing well, and has had at least one reason to smile today. I come bearing the loveliest, simple, pasta recipe that I hope you will try and love. If your life is as busy as mine has been these past couple of years, then I think you will be grateful to have some ease and simplicity with planning dinner at least.
When I cook pasta, I try to include protein and veggies so that we can fill our bellies with delicious food, and be satiated! I notice when I eat pasta, I never really feel full, and will be hungry a couple of hours afterwards. With that said, I wanted to create a simple quick and easy pasta dish that would feed a family of four and have leftovers. Today’s pasta with ground beef and broccoli is just that. I hope you enjoy! If you still haven’t smiled today, I hope you keep looking for reasons until you do.

Prep Time: 5 minutes | Cook Time: 20 minutes |
Serves: 6-8 | Total Time: 25 minutes |
Ingredients 2 tbsp avocado or extra virgin olive oil 1 medium onion (diced) 1-2 cloves of minced garlic, or 2 tsp minced garlic from a jar 1 lb. ground beef (I use grassfed) 1/2 cup chicken or beef stock (I used this one) 1 tsp salt or more to taste (my favorite is this) 1/2 tsp ground pepper 16 Oz. Egg Noodles, or your favorite pasta 1 head of small broccoli (approximately 2 cups when chopped into florets) *Optional 1/2 cup sharp cheddar or your favorite cheese (to taste) Serve with yogurt on the side if desired |
Instructions 1. In large pan on medium heat, add oil and diced onions and saute for about 5-7 minutes until onions become translucent. 2. Add ground beef and break it up with a spatula until small pieces are formed. 3. Once beef looks mostly cooked, add salt, pepper, and chicken stock and stir well and lower the heat. Cover and cook on low heat for about an additional 10 minutes. (Check occasionally to make sure the chicken stock has not completely been absorbed.) 4. Chop broccoli into small florets and set aside. 5. Meanwhile, bring a large pot filled with water to a boil and cook pasta according to package instructions. (Season with 1-2 tsp of salt AFTER water boils) 6. Just 4 minutes before the pasta is ready, add broccoli into the pot. Turn off and drain pasta with the broccoli. 7. Bring pasta and broccoli back into a pot and add the ground beef mixture to it and stir well. Add cheese if desired. 8. Enjoy warm with a side of yogurt if desired. |
