Ever taken the time to look at ingredients in a cookie from the store, saw more than a paragraph and put it right back on that shelf? Or just wanted a healthy snack for yourself and your kids and felt hopeless at the lack of options? Then this cookie will definitely change your life!
What I am about to share is easy, simple ingredients you probably already have AND no dairy or sugar in the recipe! Now you are probably thinking, “Oh no, but is it going to taste good?!” The answer is YES! These cookies taste amazing! It has literally 5 ingredients and takes 8-10 minutes to bake! So not only is it easy to make, healthy, and delicious, it is also ready in under 10 minutes!
I love making these for breakfast when I want a fast and healthy snack, I prefer it to a breakfast bar any day. My toddler also loves it, and I feel good about it because it’s healthy and doesn’t have sugar. Occasionally I like to add chocolate chips in them.The coolest part is that anyone can make this, if you know how to use an oven, you can make this. If you don’t have much time or patience for baking, or are a beginner baker, or just want something simple and healthy, this recipe is a great recipe to start with.
One thing to remember is that all ovens have a personality of their own. Some bake in less time, others take a few minutes longer. What you want to look for with these cookies is that edges turning slightly golden brown. Also, let the cookies cool before transferring them to another container, that way they will be sturdier and not crumble apart as easily. Other than that, I want you to feel empowered any time you bake. Know that you can make anything your heart desires if you have a positive mindset and are willing to keep trying no matter what. You can make healthy food that tastes delicious and it doesn’t always have to be hard. If some things are hard, remember, you can do hard things, if that is what you desire. π Happy Baking!

Ingredients 1 3/4 cups organic gluten free old fashioned rolled oats (this is my go to) 2 overripe bananas 1/2 tsp cinnamon 1 tsp vanilla extract 1 tsp baking soda Optional- a handful of candy covered chocolate chips, walnuts, or semi sweet chocolate chips to place on top of cookies. |

Instructions 1. Preheat oven to 350F. 2. In a medium size bowl, mash the overripe bananas really with a fork. 3. Add oatmeal, baking soda, cinnamon vanilla extract, and stir until well combined. 4. Using a medium sized cookie scoop, scoop out the batter and gently roll them into a ball and place onto a cookie sheet lined with unbleached parchment paper. 5. If adding any chocolate chips or nuts, place them on top of the cookie batter and gently press them in. 6. I also use a spoon or my hand to flatten the cookie dough a little bit. 7. Bake for about 10 minutes, or until the edges of the cookie are slightly golden brown. Let it cool for 5 minutes before serving. Store them in an airtight container for up to 3 days. |
