If you have never tasted a jello you ACTUALLY really enjoyed, you’re not alone! But it doesn’t have to be that way anymore. Once I discovered I can make my own jello that does not come from a box and isn’t loaded with wayy too much sugar, food dyes, and preservatives, I felt like I was on cloud 9! IT IS possible, and what’s even more exciting is that the possibilities are endless!
You may wonder who gets this excited about jello, but very soon, you will! That is, if you make my rose jello recipe. π I discovered the magical product of gelatin powder, and what was even more exciting, I found the healthiest kind! Gelatin powder from grass fed, pasture raised cows. (WHAT?!) I have never really gotten into collagen powder, but was always mesmerized by all the benefits it claims to have. What’s even more exciting is that gelatin powder does that same thing, only I can play around with the flavors.
So let’s recap for a second, a delicious, healthy dessert, that is good for your skin, bones, joints, hair and nails, add that with a remarkable Mediterranean exotic flavor that will have everyone who tastes it, (including kids) asking for seconds? You can count me in! My 1 year old is obsessed, and it makes this mama very pleased!
I do have to say that finding rose juice can be challenging if you don’t have any Mediterranean markets near you, but it is definitely worth the hunt if you do!

You can make this jello in any mold you desire (or you can use this one), so have fun with it and enjoy!


Prep Time: 5 minutes | Rest (Refrigeration): 3-4 hours |
Serves: 6-8 | Total Time: 4 hours and 5 minutes |
Ingredients 2 tbsp grass fed, pasture raised, unflavored gelatin powder (I love this brand!) 4 cups rose juice divided into (3 1/2 cup and 1/2 cup)--I used a brand called Premium Fresh 2 tbsp organic sugar Optional-1-2 tsp edible dried rose petals or rose buds (such as this one) for garnish Optional- This jello mold |
Instructions 1. In a small bowl, place gelatin powder and 1/2 cup a rose juice. Stir and let it set for 5 minutes. 2. In a medium saucepan over medium heat add 3 1/2 cups of rose juice and sugar and heat until small bubbles just begin to form. 3. Turn heat off and add the mixture with the gelatin into the hot mixture. Stir until the gelatin has dissolved. Let the mixture cool for about 10 minutes then pour into a jello mold, or any desired container of choice. Refrigerate for 4-5 hours. 4. When ready to serve, if using a jello mold, add a flat large plate (like a sheet pan) with hot water and place the top portion of the jello mold in it (without opening it) for about 2 minutes. Then, flip the mold onto a large serving plate and gently open the lid of the jello mold. Garnish with dried rose petals and serve. *If not using a jello mold you can skip the last step |
