If you like fish, salads, recipes with fish, quick healthy lunches, you are going to lovee my 5 minute arugula salad with sardines. Yes! You read that correctly, a sardine salad. Arugula is such positively, potent food with a ridiculous list of health benefits!
Fun fact? Did you know that arugula actually belongs to the family of cruciferous vegetables like broccoli and cauliflower? In the book “Food What the Heck Should I Eat?” written by Dr. Mark Hyman, on page 112 he states, ” Arugula is in the cruciferous vegetable family. It is more like broccoli than lettuce and contains all sorts of nutrients like calcium and phytochemicals that help with detoxification of environmental chemicals and prevent cancer.” If this doesn’t make you run to the grocery store and buy some arugula, I don’t know what will!
The best part of this recipe is you don’t have to heat anything, minimal dish washing, and so deliciously filling! (It keeps me satiated for hours!) I know not everyone likes fish, but if you do, do yourself a favor, make this 5 minute salad, eat it, and be mindful of how you feel afterwards. Feel free to double or triple this recipe. Time to get some arugula, sardines, and dive in!

Ingredients 4-5 small pieces of sardines from a 4.4 oz can I use this sustainably sourced sardine 2 cups baby arugula (thoroughly washed) 1 tbsp fresh squeezed lemon juice 1/4 tsp salt 1/8 tsp fresh cracked black pepper 1 1/2 tsp Extra Virgin Olive Oil (My favorite is this one) |
Instructions 1. Thoroughly wash arugula, pat dry with a paper towel and place in a medium bowl. 2. Add olive oil, lemon juice, salt, black pepper and lightly toss. 3. Top with sardines, and enjoy! * I discard the olive oil in the can since I am using my own olive oil in this recipe. |
