The only tabule (tabuli) recipe you will ever need!

If you have tried tabule, and weren’t a fan, it is highly probably you didn’t try the best recipe. I grew up eating ALOT of tabule, and the only one I really liked was made by my mom. I would compare every single tabule recipe to the one my mom made and no tabule came close to tasting as good as hers! It is one of my favorite salads in the whole world! Everyone would talk about my mom’s tabule salad, it was that good.
As I got older, I asked her for the recipe so I can make it myself. Moms are usually pretty good at eyeballing so she never really measured, but tried to, for me. (I understand now, because the more I cook, the more I eyeball recipes too) I made tabule countless times and it was good, but not like hers. I kept trying, always tweaking it because I wanted it to taste exactly like hers! Many years later I finally got it right, but one thing I learned was that it is likely to taste slightly different each time because the smallest change (ripeness of tomato, freshness of greens, etc.) made a difference. My mom always made it when it was tomato season, and that’s one of the reasons why it tasted sooo good!
With that said, tomatoes are a key ingredient in this recipe. I have tried making this with every type of tomato you can think of, the best ones to use are also the rarest. So, it works really well with heirloom, ripe, slightly sweet tomatoes (think farmer’s market). That doesn’t mean you cannot make it with any other tomatoes, it just means, if you want that optimal, best tabule, flavors exploding taste buds kind of salad, that’s what you would need.
In this recipe, I used very ripe tomatoes, I did not have heirloom tomatoes at hand, and they tasted delicious. Bulgur is also a key ingredient in tabule, I know there are versions with other grains such as quinoa, but I like the classic best. Bulgur is a type of wheat so it does contain gluten, but it also contains an exceptional amount of good vitamins such as, but not limited to, magnesium, manganese, iron, fiber, and folate. Without further adieu, let’s make the best rockin’ tabule you have ever tried in your life!

Serves: 4 |
Ingredients 1 bunch Italian parsley 1 bunch green onions 4-5 medium ripe tomatoes (or 3 large) 1/2 cup bulgur +1 tbsp 3 tbsp extra virgin olive oil (this is one of my favorites) 1 tbsp fresh squeezed lemon juice 1 tsp paprika (I use this brand) 1 tsp salt (my favorite) | *Optional 1/4 cup pickles 1 tbsp fresh mint leaves 1 tbsp fresh basil |
Instructions 1. Fine chop parsley (stems included), green onions, bulgur, and tomatoes and place into a large bowl such as this one. (use the juices of the tomatoes too, don’t discard that part) 2. Reserve about 1/3 cup of tomatoes in a separate bowl. 3. Add olive oil and lemon juice into your large bowl and mix with a large spoon. 4. Add the 1 tablespoon of bulgur to the reserved tomatoes and mix with a spoon, let it sit for about a minute and then add to the large bowl. 5. Add salt and paprika and mix well. 6. Taste the salt, if you need more salt feel free to add it to your salad. |
